The application of HACCP “Hazard Analysis Critical Control Point”, that is the analysis of the risk and the control of critical point, is an applicable methodology, internationally recognized, to prevent or reduce the risks for the safety in the cooking process of food and in the preparation of beverage.
In Europe and in the United States, companies working in the food sector must have an HACCP manual.
In this specific case, the course is addressed to owners of businesses related to food.
It will be our task to write the self-inspection manual with the related registration cards.
Moreover, three inspection visits per year will be done, where the compliance of the healthcare principles will be verified and some microbiological sample will be done, through the use of sterile swab on work equipment and surfaces.
